Dalam keterangan resminya, Luke Chiang menjelaskan bahwa lagu ini mengangkat kisah penyesalan atas kata-kata yang tak sempat diungkapkan setelah meninggalkan seseorang yang masih dicintai.
say that! juga menggambarkan keinginan agar orang tersebut mengetahui bahwa pernah ada masa ketika Luke benar-benar ingin menghabiskan hidup bersama, meskipun pada akhirnya harus memilih untuk pergi.
